Madison is Pink Heifer's fast-casual sister location to the Monticello Mothership. It is built for quick pickup, delivery, lunch, late-night meals, and State Street energy.

Madison follows Pink Heifer recipes and quality standards with a smaller, more focused menu. Food is prepared by the central Pink Heifer smokehouse and delivered fresh to Madison, where the State Street team preps, carves, and serves it. The two restaurants do not prepare every meat in exactly the same way on site.

Madison offers a smaller menu designed for fast-casual service, while keeping Pink Heifer favorites including USDA Prime brisket, pulled pork, smoked chicken, signature Wagon Rolls, sandwiches, platters, Mac n’ Cheese bowls, salads, and scratch-made sides.

Our USDA Prime brisket is smoked for 12 to 14 hours, then rested for 2 to 4 hours before carving to protect its tenderness, juices, and smokehouse flavor.

Yes. The Monticello Mothership remains the full-service Pink Heifer Saloon and Smokehouse, with its larger menu, bar, live music, events, and banquet spaces. Madison brings the same barbecue standards to State Street in a faster format.

Pink Heifer began at the historic Mothership at 149 North Main Street in Monticello, Wisconsin. That is where the recipes, standards, and identity behind the Madison BBQ Saloon were built.
