Both locations receive product from one central Pink Heifer smokehouse. Product is prepared there and delivered fresh every morning to Madison and Monticello, helping keep the quality consistent from location to location.

Madison offers a smaller menu designed for fast casual service, while keeping the Pink Heifer favorites guests come for, including USDA Prime brisket, premium pulled pork, juicy smoked chicken, signature Wagon Rolls, sandwiches, platters, mac bowls, salads, and scratch made sides.

How long is the brisket smoked, and why does it rest?

Our USDA Prime brisket is smoked for 12 to 14 hours, then rests for another 2 to 4 hours. It is delivered to Madison during that resting period, helping the juices, tenderness, and smokehouse flavor stay perfectly intact.

Yes. Select Order Now to use the official Pink Heifer ordering page for pickup or delivery when available. DoorDash and Grubhub may also be available, but ordering directly is the preferred way to order from us.
