Our BBQ Saloon concept delivers the same uncompromising quality and hospitality that define the Pink Heifer name, re-imagined for downtowns, neighborhoods, and high energy locations. Guests can expect expertly smoked meats, scratch made sides, and a welcoming saloon style atmosphere that feels elevated yet approachable. This is quick service barbecue, done the Pink Heifer way.

Pink Heifer was born in a historic building on Main Street in Monticello, Wisconsin. Known as the Mothership, this flagship smokehouse is where our identity was forged, recipes were perfected, and standards were set. The Monticello location remains our creative home, our testing ground, and the soul of the Pink Heifer brand.
Now, that same Pink Heifer experience has expanded to downtown Madison, Wisconsin, with our State Street BBQ Saloon bringing real smoked barbecue to the heart of the city. Built for speed without sacrificing quality, the Madison location delivers the same bold flavors, hospitality, and commitment to craft that define Pink Heifer.

The Pink Heifer Farmers and Families Initiative is our commitment to supporting the farmers and families who form the backbone of our communities. Rooted in Wisconsin and guided by respect for agriculture, hard work, and neighbors helping neighbors, this initiative reflects a simple belief. Great food begins long before it reaches the table.
At Pink Heifer, farming is personal. Our family has deep ties to the Midwest, and we understand the real challenges farmers face today, from rising costs and unpredictable markets to labor shortages and the growing pressures on rural life.
This initiative exists to provide meaningful, tangible support to the people who dedicate their lives to feeding others. Through charitable giving, strategic partnerships, and community driven programs, we strengthen both farms and families. The majority of funds raised support organizations serving farmers and agricultural professionals, including veterinary care, livestock health, mental health resources, and farm sustainability efforts. A portion also supports charities that assist families in need, because strong communities depend on stable homes.
